Let us introduce you to the easiesssssst, yummiest and guilt-free Peanut Butter Mousse ever! Easy, yummy and guilt-free! Babe we hear you calling bullshit, but hear us out.
Nutritionist and all-round wiz in the kitchen Casey-Lee from Live Love Nourish, has been kind enough to share with us the recipe for her sugar free, gluten free and dairy free Peanut Butter Mousse. The best part, you only need 3 ingredients!
Prep: 5 mins (wait maybe this is the best part!?)
1 extra large banana (200g), chopped & pre-frozen
3 heaped TBSP (90g) natural peanut butter
400ml full fat/premium coconut milk, refrigerated overnight
- Take your refrigerated coconut milk out of fridge (do not shake). Scoop out thick solids, should yield approx. 200ml. Keep liquid for another use (great for smoothies).
- In a blender combine 200mL coconut cream with banana and peanut butter until smooth and creamy. Add a touch extra of coconut milk to help blend if needed.
- Serve immediately and top with crushed peanuts and an extra drizzle of peanut butter. Or, refrigerate for later (if you can wait that long!) You can also freeze for 1 - 2 hours to firm a little more.
