INGREDIENTS

1 cup plain flour

1 scoop Health Lab Vanilla Thickshake Protein Powder

1¼ tsp baking powder

Pinch of salt

¼ cup unsalted butter, softened

½ cup caster sugar

2 eggs
-
¼ cup almond milk or milk of choice
-
3 tbsp coconut yoghurt or yoghurt of choice

Dash of vanilla extract
METHOD

Preheat the oven to 170°C fan-forced and line a baking tin with baking paper.

Beat the butter and sugar until pale and fluffy.

Add the eggs and beat well until combined.

Add the vanilla extract and yoghurt and mix until combined.

Add the flour, baking powder and salt, then gently fold through until almost combined.

Add the Health Lab Vanilla Thickshake Protein Powder and gently fold through.

Add the milk and continue folding until the batter is smooth and combined. Do not overmix.

Pour the batter into the prepared tin and smooth the top.

Bake for 30 minutes, or until a skewer inserted into the centre comes out clean.

Allow to cool completely.
Vanilla Protein Buttercream
Ingredients

½ cup unsalted butter, softened

1 cup icing sugar
-
1 scoop Health Lab Vanilla Thickshake Protein Powder

Dash of vanilla extract
-
2 tbsp almond milk or milk of choice
Method

Beat the butter until pale and fluffy.

Gradually add the icing sugar and protein powder until smooth.

Add the vanilla extract.

Add the milk as needed until the buttercream is smooth.
To Assemble

Using the dish you would like to serve the cake in, cut circles from the cooled cake.

Place a cake circle into each dish.

Spread a layer of the vanilla protein buttercream over the top.

Dip into the sprinkles until coated.
